Peanut Butter Cookies with Cinnamon Chips

Peanut Butter Cookies with Cinnamon Chips - The Stiers Aesthetic

So these cookies came about a few weeks ago when I was craving something sweet and had nothing in the house, at least nothing pre-made, I should say. I started combing the pantry and thought, surely I have enough stuff to bake something. A cake? Cookies perhaps? Flour, butter, eggs, cinnamon chips...and PEANUT BUTTER! And then these babies were born...

Ingredients:

• 2 cups all-purpose flour
• 1/2 teaspoons baking soda
• 8 tablespoons (typically one stick), of salted butter, melted and cooled
• 8 tablespoons of creamy, natural peanut butter, melted and cooled
• 1 cup brown sugar, tightly packed
• 1/2 cup sugar
• 1 egg and 1 egg yolk
• 2 teaspoons vanilla extract
• 1 tablespoon skim milk
• 2 cups cinnamon chips

Directions:

Preheat oven to 325 degrees. Melt butter and peanut butter in a microwave safe bowl, heating in 30 second increments and let cool. I placed the bowl immediately in to the refrigerator for a bit, but don't leave in too long or it will solidify again!

Mix the flour and baking soda in a small to medium size bowl and set aside. In a larger bowl, mix the cooled butter, peanut butter, sugar and brown sugar until they are combined. Then add the egg, egg yolk, and vanilla and stir until mixed. Start to gradually add flour and mix until a dough forms. After stirring a bit, add milk and continue to mix with your hands. Lastly, fold in the cinnamon chips.

Once the dough and chips are thoroughly mixed, shape the dough into balls, roughly the size of a golfball . Use a dinner fork dipped in sugar to lightly press cookies, flattening and forming a criss-cross pattern on each cookie. Line two baking sheets with baking paper and place cookies two inches apart. Bake for 12-14 minutes or until the edges are slightly brown. (Careful not over-bake your cookies or they will end up hard, like hockey pucks!) The centers should be somewhat soft. Remove from oven and let cool on the baking sheets for 2-3 minutes. Move cookies to cooling rack for another 5 minutes and if you'd like, sprinkle lightly with sea salt, if you want that yummy salty-sweet combination. Enjoy!
