Can you believe its almost 2018?! I certainly can't. And I can't believe I've been blogging for 5 years!

If you've followed along, you probably know that I love champagne cocktails. So for New Year's Eve, I wanted to make a pre-midnight drink for friends, carrying the champagne theme throughout the evening. This boozy champagne punch is mixed with pomegranate juice, mint and lemons, then kicked up a notch with rum! The original recipe calls for a brut champagne but you can also use something more sweet, like my fav, Martini and Rossi - Asti. If you use something on the sweet side, omit the simple syrup noted below.

Ingredients

  • 1/2 cup water
  • 1/2 cup sugar
  • 2, 750ml Brut Champagne (omit simple syrup if you use a sweet champagne or sparkling wine)
  • 1 1/2 cups white rum
  • 1 1/4 cup pomegranate juice
  • 1-2 large lemons, thinly sliced
  • Seeds from one pomegranate (Here's a great video on how to seed a pomegranate)
  • Fresh mint leaves
  • 1 ice block (I filled a plastic bowl halfway with water and froze over night)

Directions

  1. Combine water and sugar in a small sauce pan and bring to a boil. Stir until sugar dissolves, simmering for about 5 minutes. Let cool completely.
  2. Place your ice block in a punch bowl and add, champagne, pomegranate juice and rum, stirring until combined. Add simply syrup to achieve desired sweetness. 
  3. Mix in lemon slices, pomegranate seeds and mint leaves.
