On this beautiful Mother's Day, we celebrated by making a Croque-Madame. This French take on a grilled-cheese is made with Gruyere cheese, prosciutto and topped with a fried egg. This is definitely Sunday brunch material and not something for those watching their calories! But hey, it's always good to splurge now and then and what better way than with this lovely "madame," and a mimosa?
